Poultry Processing Workshop @ The Flock Farm, Anna, IL

The University of Illinois Extension and Food Works hosted a practical two-day chicken butchering workshop as part of the Homesteading Series. Held at The Flock Farm in Anna, IL, and led by farmer and owner Brent Glays, the event gave participants hands-on experience with heritage breed chickens in the farm’s state-of-the-art processing facility.
The workshop was designed for anyone interested in learning safe and effective poultry processing techniques to use at home. Participants learned how to become more self-sufficient, enhance their homesteading skills, and better understand how to sell farm-finished poultry. Topics included poultry processing methods, meat labeling for farm sales, and best practices for packaging and storage.
Designed for beginners, the workshop required no prior experience—just a willingness to learn and get hands-on. Participants received expert instruction, had ample time for questions, and took part in a fun, educational, hands-on environment.

What to Bring:

• All participants must wear rubber boots at the event. The host will provide gloves and disposable aprons.

Facilities:

• Restrooms will be available on-site during the event.

Meals:

• A meal will be provided for all attendees.

Join us for a two-day event on Friday, August 7th, from 8am to 12pm, and Saturday, August 8th, from 2pm to 6pm. Both days are essential for full participation. You can also bring a second guest for the same registration fee of $95* (please select the appropriate option when registering). This price includes sessions on breeds, feeds, processing, labeling, and marketing. Also, take home two birds that you will have harvested and packaged yourself. Don’t miss out on this opportunity!
